The Best And Easy Tomato And Zucchini Tart

Hello? Is this thing on? I know, I know, it’s been a while, but I’m back with another recipe guys! ☺️ Today we’re making a beautifully layered tomato and zucchini tart. This recipe is super easy and perfect for the summertime.

A few weekends ago, I asked Rashad to make this tart for me to share on the blog. With the blazin’ summer heat, I don’t think any of us want to be in the kitchen cooking all day (tuh, not I)! That’s why I’m sharing this fancy tart; although it’s not nearly as fancy as it looks and is very easy to make.

I’ll never forget the first time we had this tart. My girlfriends came over for the weekend, and they loved it!

The vegetables used in this recipe are from the Farmer’s Market; however, whatever you prefer will suffice. The most time-consuming part of this recipe is cutting the veggies and laying them on your pie shell. If you start from the outer edges and work your way around, the process is a lot faster.

TOMATO AND ZUCCHINI TART INGREDIENTS

  • 2 medium sized zucchinis
  • 3 roma tomatoes
  • 1 tablespoon basil (fresh or dried)
  • 1 teaspoon oregano (fresh or dried)
  • 1/2 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • garlic powder
  • kosher salt
  • ground black pepper
  • balsamic glaze
  • pie shell
  • parmesan cheese (regular or vegan)

STEP-BY-STEP INSTRUCTIONS

  1. Thinly slice zucchini and tomatoes
  2. Marinate zucchini and tomatoes in separate bowls with salt, pepper, garlic powder, lemon juice, vinegar, oregano, and basil for one hour
  3. Dock the pie shell to allow steam to escape while baking
  4. Bake the pie shell at 350 degrees for 15-20 minutes or until golden brown
  5. Add parmesan cheese to the bottom of the baked pie shell
  6. Layer marinated zucchini and tomatoes into the pie shell
  7. Bake for 15 additional minutes
  8. Top with balsamic glaze
  9. Serve warm or at room temperature! Enjoy!
